You want declarer to win tricks when it suits you and not when it suits him. The key to this defence is to duck the first round and now declarer might be in the dummy but now no longer has the entry to the clubs.

When this hand was played against me, East covered the first trick and I was able to win and merely establish the clubs. I now had the entry with dummy’s ©10.

If East ducks the first trick declarer is in a hopeless situation and has nowhere to go for his tricks with West not taking his club King until the third round. Declarer now makes just 6 tricks  going three down in an attempt to get home, losing 4 Hearts 1 Club 2 Diamonds and 1 Spade,

Once declarer sees that West is not taking his club, perhaps he should try the Spades first and now will only go one down.
